Recipe #4 Easy Cheap and Healthy Tacos

This is my recipe for tacos, throwing in chickpeas stretches this meal to feed more people for less money.

I chop up some lettuce, tomatoes, and onions....sometimes I throw in cilantro if I happen to have some and put them to the side along with some sour cream for taco toppings.

I get about a pound of lean ground beef and cook it up, when it's mostly brown with a little pink I throw in a can of chickpeas (rinsed and drained), 1/4cup of water and 1 Tablespoon of homemade taco seasoning (the homemade taco seasoning is KEY).  Let the water cook off, but not so long that the ground beef turns to jerky.
I heat the taco shells up in the microwave.
It's a quick tasty meal. :)

        I highly recommend this book, it's helped me in many areas of my life, from housework to child rearing.

The Silent Governess by Julie Klassen
     I really enjoyed this book, I couldn't put it down.

Though Waters Roar by Lynn Austin
     I just love anything by Lynn Austin :)

Within My Heart by Tamera Alexander
     Another great historical romance book.  I have read almost all of Tamera's books, she writes about historical Colorado and ties in all the different characters from her previous books.

Sacred Influence- How God Uses Wives to Shape the Souls of Their Husbands by Gary Thomas-  I liked most of this book, I can't say that I agreed with all that Gary had to say but it's worth reading.


A Thomas Jefferson Education: Teaching a Generation of Leaders for the Twenty-First Century by Oliver DeMille- 

This book discusses how to use Classic Novels to educate your kids and yourself.  

Easy Chinese Food Recipe #3

My friend Debbie gave me this great easy recipe.
Start off with some cooked chicken breast cut into cubes...then just add some frozen veggies and two packages of the ramen noodles (just the noodles) with a cup of chicken broth or water. Let it cook down and then add some soy sauce. Quick chinese food!!

Pork Chops meal #2 Easy, inexpensive, sort of healthy

I found this recipe on the Pioneer woman.  I changed it a bit.  I decrease the flour to 1/2 cup and leave out the butter.  I also found a recipe for my seasoning salt on allrecipes.com

I'm not sure if Pork Chops are ever healthy, but I fry these babies up in olive oil and they are spectacular and very easy!!

I've been buying my meat at Target these day, and I think their meat is actually much better quality than other grocery stores in our area.

I served this with rice from my new rice cooker, which I highly recommend.  I got my rice cooker at Target, it also steams vegetables.  It is so much easier than cooking rice on the stove top and the rice comes out just like the rice they serve at a chinese restaurant!

Easy, Healthy, Chicken recipe #1 Garlic Orange Chicken

I am on a mission to come up with 30 inexpensive, healthy, quick recipes for my family.
My mother-in-law gave me this one.
I call it Garlic Orange Chicken
I serve it with rice and asparagus.

Ingredients-
3 cloves of garlic diced up
bread crumbs
chicken breast or tenders cut so they are thin
1/2 cup of orange juice
cooking oil

Directions
Cut the chicken so it is thin
Throw the chicken pieces in some breadcrumbs until they are coated
Heat the oil in a pan
Toss in the garlic
then toss in the chicken
flip the chicken, add more oil if needed
when the chicken is almost done pour in the orange juice
keep it cooking until the orange juice gets thick like a glaze


I am new at writing recipes, but I think you get the idea of how this recipe works :)

Find joy in other things: the people who support you, everyday blessings, anticipated vacations.


Endure.  Infertility is a struggle that is not pleasant and is often long.  Build up those muscles that allow you to endure.    Endurance sports build up your strength. (Romans 5:3-5)


Release emotions...don't try to trap them in or bypass them.  Acknowledge them when they come, release them in a safe place to God and to trusted friends but don't let them rule you.


Talk about it with those who understand.  How helpful to receive emails from Sarah's Laughter tailored to your struggle or to talk to women who have been in your shoes!


Inform yourself: the unknown is not helpful.  It is so much easier to be calm when you are prepared and know your options


Leave behind worry:there are so many factors that you can't possible control.  Worrying about them helps no one...not you nor your spouse.


Idle when you can! Take time to rest with those you love.  It's easy to be driven and not enjoy the down times.


Turn to God when you feel like turing away.  It is an effort of the will to turn towards someone you feel has disappointed you.  He may have wounded us but He will bind us up! (Hosea 6:1)


Yield to God's will.  It is unknown but unfailing.  Daily submitting and accepting His will as good protects our hearts from rebellion.  (Romans 12:2)
